Yummy Grilled Corn Salsa
Ingredients
2 large ears of corn
¼ cup red onion
2 large ripe tomatoes, diced
½ Anaheim or Poblano Pepper
3 tsp. olive oil
1 tsp. taco seasoning
Juice of 1 lime
1 tsp sugar
Sea salt & ground black pepper
Preparation
1. To grill corn, leave the husk on and place on grill for several minutes, until the husk is roasted to a dark color
2. Remove husk and strings and replace on the grill for additional color and flavor, approximately 2-3 minutes, rolling to heat all sides
3. Taste and adjust seasoning as desired
4. Serve immediately with corn or tortilla chips or use as a topping for scrambled eggs or as a sandwich filling. Will keep in the fridge for several days
