About:

I have always loved homemade soap and finding the soap-makers at art fairs, festivals, and farmers markets. About 15 years I decided to look into making soap myself with the intention of personal use and gift-giving. I fell in love with the process and enjoy working with many different oils and fragrances. Over the years people asked me if and encouraged me to sell my soap. Finally, my husband and I made that happen in March 2019.

I love homemade and homegrown items. Produce seems to taste richer/purer, and it’s special to meet gift and talented artisans who are skilled in their craft.

Roasted Tomato Tortilla Soup from Pillsbury Cookbook Magazine “Mexican Cooking” May 1995

Ingredients

  • 5 medium tomatoes

  • 2 Anaheim Chile peppers, cut in half lengthwise, seeded

  • 1 tablespoon oil

  • 1/2 cup onion, chopped

  • 2 garlic cloves, crushed

  • 5 1/2 cups chicken broth

  • 1 tablespoon cilantro, chopped

  • 2 teaspoons cumin

  • 1/2 teaspoon sugar

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper

  • 8 corn tortillas cut into 1/2 inch strips

  • Oil for deep frying

Cover broiler pan with foil. Cut tomatoes in half lengthwise; remove stem ends. Place tomatoes , cut side down on broiler pan. Broil 3 to 4 inches from heat for 15 to 20 minutes or until skins are charred. Cool 10 minutes. Peel and discard skins. Repeat with chiles, broiling 5-10 minutes.

Meanwhile, heat 1 tablespoon oil in large skillet over medium-high heat. Stir in onion and garlic; cook 3 to 4 minutes or until onion is softened, stirring occasionally.

Place peeled tomatoes, peppers, cooked onion and garlic in food processor bowl with metal blade or blender container. Process in batches until mixture is well blended.

Pour pureed tomato mixture into large saucepan. Cook over medium heat 2 minutes, stirring constantly. Reduce heat to low; cook an additional 5 to 6 minutes, stirring occasionally. Stir in broth, cilantro, cumin, sugar, salt and pepper. Cover; cook over low heat 15 to 20 minutes or until flavors are blended and soup is thoroughly heated.

Meanwhile, in same skillet, heat 1/2 inch oil to 375 degrees F. Add about 1/4 of the tortilla strips to the hot oil. Cook 1 to 2 minutes or until crisp. Using slotted spoon, remove strips; drain on paper towels. Repeat with remaining strips. Stir tortilla strips into hot soup. To serve soup, ladle into serving bowls.
