Preserving Salsa

We love enjoying homemade salsa all year long, but be sure you are preserving yours correctly! Because salsas are a mixture of acid and low-acid ingredients, they are appropriate for boiling water canning if the level of acidity is adequate to prevent the production of the botulism toxin. To avoid illness, only can a research-tested, approved recipe and follow the directions carefully. Wanting to preserve a recipe that hasn’t been tested? Freeze it! Freezing is the only safe option for preserving untested or original salsa recipes.
