Potato Soup

Potato Soup-a Fall classic!

Ingredients

  • 3 lbs Potatoes

  • 1 Leek diced

  • 3-4 Garlic Cloves minced

  • 1 qt Vegetable Stock

  • Salt

  • Pepper

  • Thyme

Preparation

Add potatoes and salt to boiling vegetable stock. Boil until potatoes are soft. Add potatoes and broth to blender and blend. Saute leeks and garlic until soft and fragrant. Add blended potatoes to leeks and garlic and add seasonings according to taste.
