$20 Challenge - Summer Seasons

We had a guest shopper for the $20 Challenge! One of our youth volunteers wanted to see what he could do with $20 at the markets, and we love what we ended up with.

On Sunday July 12, we purchased the following from our Orenco Station Market:

  • Tomatoes - Nuts About Berries, $3 (approximate)

  • Radish - Reyes Produce, $2

  • Blackberries - Crawford’s Produce, $3.75

  • Bell Peppers - Pablo Munoz Farm, $3 (approximate)

  • Carrots (Organic) - Pitch and Plow Farms, $4

  • Baby Kale - Black Dirt Farms, $3

  • Total Purchase = $18.75 (approximate)

  • Total # of Recipes = 5

Baby Kale and Blackberry Salad

If you’re anything like us, salads are the perfect summer no-heat meals! This simple salad can be customized to meet your specific needs.

Baby Kale Chips

This tasty treat is so crunchy and healthy, plus so easy to make! We had some baby kale left from our salad, and we’re so glad we did!

Marinated Tomatoes

Tomatoes are back and we couldn’t be happier! Fresh tomatoes are an important part of our summers and we savor every moment. This recipe is light and a delicious side to any meal.

Radish, Carrot, and Cilantro Salad

With our radishes and carrots about the same size, our salad was as beautiful as it was tasty. This is our new go to for when we want a dish with some crunch.

Stuffed Bell Peppers

There’s something about bell peppers that begs to be stuffed! We picked a classic recipe with ground beef and cheese. Opt for a ground chicken or vegetarian option. There’s no wrong way to stuff a pepper.
